Our starting serve is 3 oz of Stillbound Pommeau, neat, in a Glencairn glass. No mixer. No garnish. A chance to meet the cider, brandy and oak together.

Bring the glass close, notice the aroma, and take a small sip. Caramel, baked apple and oak are the notes we look for. Let your own impressions lead.

Then make it yours.

The house serves take pommeau in different directions. Needle & Ash uses maple, bitters and a smoked glass. The Slow Ember brings warm apple cider, rosemary honey and black walnut bitters to a glass mug.
