Most American spirits are aged at sea level. Ours isn't. Stillbound rests in oak at 5,280 feet, in the North Fork Valley of Colorado. The air is thinner up here, the nights are colder, and the barrel works differently because of it.

Mount Vernon, 1798. George Washington is sixty-six years old. He is one year retired from the presidency. He owns a working distillery. The records from that year list rye, peach brandy, and apple brandy distilled from the orchards on the property. The country has not yet been told to forget about it.
